Makes 1 loaf or 8 mini loaves

Preheat oven to 150 C/ 300 F

Line a 10 x 21 cm/4 x 8 inch loaf pan with baking paper or grease 8 mini loaf pans


3 1/2 cups of almond flour

1/4 tsp salt

1tsp baking soda

1 Tbs cinnamon

3 eggs

1 cup of plain yogurt

3/4 cup of honey

1/2 cup of raisins


Combine the almond flour, salt, baking soda and cinnamon . In another bowl, whisk the egg with the yogurt and honey. Mix the almond flour mixture with the egg mixture and raisins until well combined. Pour the dough into the prepared pan or pans. Bake for 1 1/2 hours for large and around 1/2 and hour for the mini version, or until the center of the loaf feels spongy. Remove from the oven and let cool for 10 minutes before removing from the pan. Refrigerate in an airtight container.
