Strawberry Poke Cake is one of our family’s favorite desserts for Valentine’s Day! It is a moist and delicious cake that literally melts in your mouth! If you’d like a light dessert that isn’t too filling, this cake will surely be a winner with your family, too!
One Yellow Box Cake Mix
One Small Package of Strawberry Gelatin (3 oz.)
1/2 pound of Fresh Strawberries
Make the yellow cake according to package directions. When the cake is done, poke holes in the top of the cake (while still warm) with the end of a wooden spoon (see photo below).
To mix the gelatin: Pour package contents into a medium-sized mixing bowl. Add 1 cup of boiling water and stir until all the gelatin is dissolved. Add 1/2 cup of cold water to the gelatin mixture and stir well.
Pour the entire bowl of gelatin over the cake. **Make sure to distribute the gelatin over the entire cake as your pour.
Refrigerate the cake at least two hours before frosting.
Frost the cake with one tub of whipped topping and add fresh sliced strawberries to the top.
If you haven’t tried the new Cool Whip brand frosting by Kraft, they are great with this cake. We used the cream cheese flavor; it was perfect with this cake and the fresh strawberries!
Strawberry Poke Cake doesn’t last long in our family! In the words of our 6 year old son, “Mom, this cake is SOOOOO TASTY!” It really is a great treat for Valentine’s Day!
